Chorizo Chicken Bake

This is one of my favourite lazy recipes that is quick, easy and most importantly tasty. I do a lot of this by eye, so feel free to add more or less of each ingredient depending on your taste.

Ingredients (serves 3-4)

  • 4 chicken breasts
  • Cooking chorizo
  • Zest of one orange
  • 1 red onion
  • 1 yellow or orange pepper
  • 1 teaspoon of paprika
  • Potatoes
  1. Heat your over to 180C fan and get a pyrex dish to throw everything in.
  2. Chop up the chicken and place in the dish. I season this with a little paprika but a lot of flavour comes from the chorizo so this isn’t always necessary.
  3. Chop up chorizo and take the skin off of the sausage and place into the dish.
  4. Chop up the potatoes in small little cubes so they get nice and crispy and cook quicker.
  5. Chop up the red onion and pepper and place into the dish.
  6. Once all ingredients are in the dish I like to zest an orange over the top, the flavour works really nicely here and gives a fresh taste.
  7. Now the easy part – put the dish in the oven and let it cook. My oven is slightly temperamental and very hot so I let this cook for 15-20 minutes. When the chicken is cooked you can take it out, I like the chorizo and potatoes to be crispy so I tend to give it another 5 minutes
  8. Serve up! I tend to have this with just a simple side salad.

This dish does not look the prettiest when cooked so here’s a nice before picture!
