This is one of my favourite lazy recipes that is quick, easy and most importantly tasty. I do a lot of this by eye, so feel free to add more or less of each ingredient depending on your taste.
Ingredients (serves 3-4)
- 4 chicken breasts
- Cooking chorizo
- Zest of one orange
- 1 red onion
- 1 yellow or orange pepper
- 1 teaspoon of paprika
- Potatoes
- Heat your over to 180C fan and get a pyrex dish to throw everything in.
- Chop up the chicken and place in the dish. I season this with a little paprika but a lot of flavour comes from the chorizo so this isn’t always necessary.
- Chop up chorizo and take the skin off of the sausage and place into the dish.
- Chop up the potatoes in small little cubes so they get nice and crispy and cook quicker.
- Chop up the red onion and pepper and place into the dish.
- Once all ingredients are in the dish I like to zest an orange over the top, the flavour works really nicely here and gives a fresh taste.
- Now the easy part – put the dish in the oven and let it cook. My oven is slightly temperamental and very hot so I let this cook for 15-20 minutes. When the chicken is cooked you can take it out, I like the chorizo and potatoes to be crispy so I tend to give it another 5 minutes
- Serve up! I tend to have this with just a simple side salad.
