Black bean hummus 

I’ve just got back from Florida where we are way too much – my favourite was black bean hummus at the Surfcomber hotel, eating it far too often! I decided to try and recreate it and cure my post holiday blues a little. 

Such an easy recipe – I topped it with some roasted corn, red onion and a sprinkling of feta cheese. 

Ingredients 

  • 1 garlic clove, peeled
  • 2 tbs fresh lemon juice
  • 1 tbs tahini
  • 1 tsp ground cumin
  • 1/4 tsp salt
  • 1 can black beans, rinsed and drained
  • 1 jalapeño pepper
  • 2 teaspoons extra-virgin olive oil
  • Toasted pita to serve 

Method 

  1. It’s as easy as throwing everything into a food processor until it has the texture of traditional hummus – taste and add anything extra as needed, I added slightly more tahini and lemon juice this time
  2. I love taking pitas and putting them into the oven making pita chips to serve with this
