Kung Pao Chicken

This was my first attempt at this dish, I adapted a recipe I found online slightly and I loved it! It’s probably one of my favourite things I’ve made recently, the honey and soy sauce make the chicken sweet and salty and the sauce is nice and thick!! I didn’t add more chilli as this was quite hot already, but depending on the chilli paste you use this will vary. It’s a great option if you’re craving a take away without the insane calories.

Serves 4

Ingredients 

  • 4 chicken breasts, sliced into small pieces
  • 2-3 cloves of garlic, minced
  • 2 tablespoons sesame oil, you could use Frylight here as an oil substitute, but the oil really flavours the chicken
  • 220g  green beens
  • 2 tablespoons of soy sauce, I added more to taste so probably more like 3 tablespoons
  • 1 tablespoon sriracha
  • 1 tablespoon chilli paste
  • 1 tablespoon honey, again I added slightly more so maybe closer to 2 tablespoons
  • a generous sprinkling of sesame seeds
  • rice to serve with this – I opted for boiled white, but you could use brown or even cauliflower rice if you’re being really good

Method

  1. Make the sauce – in a bowl mix the soy sauce, chilli past, sriracha and honey and whisk to combine. Set aside.
  2. Place a wok on a medium-high heat and add in 1 tablespoon of sesame oil and the garlic and chicken. Cook until the chicken is browned and then remove from the heat.
  3. Add another tablespoon of oil to the wok and fry the green beans until they soften, my burnt slightly so I’d suggest allowing the wok to cool down and also to turn down the heat.
  4. Once the green beans are ready add the chicken and sauce to the wok, I turned the heat down and let this simmer for about 10-15 minutes, this lets the sauce thicken. This is the best time to taste the sauce, if you want it hotter add more spice and likewise you can add more soy sauce or honey (I added more of both). Sprinkle over your sesame seeds as well. When you’re happy with the sauce take off the heat.
  5. Enjoy! As I said, this goes great with boiled rice as there is so much flavour in the chicken!
