I used to hate brussel sprouts, I just imagined the smell of them boiled and I felt sick. I’ve recently rediscovered them – NEVER boil them! This is is fast becoming one of my favourite side dishes.
Ingredients
- Brussel sprouts
- Pancetta (sliced into small cubes)
- Balsamic glaze (you can use balsamic vinegar, but I think this makes the sprouts too soggy – I think them to be crispy)
I never measure any of this out, it’s by eye and based on how many people I’m serving.
- Preheat your over to about 180c. Cut your sprouts in half and place in a baking dish. Drizzle some balsamic glaze over the top and put in the oven for 10 minutes.
- Meanwhile heat a pan to a high heat and fry off you pancetta so it’s nice and crispy, add this to your sprouts and cook for a final 5 minutes.
It’s a really quick and tasty side dish – I sometimes have it on it’s own as I’ve started craving it!
Best thing ever to happen to brussels and cauliflower-Roast them!
