Korean Beef

I’m always looking for new recipes, and this is one of my new favourites thanks to Pinterest. It’s really quick and easy, if you’ve ever had PF Changs Lettuce Wraps these are the meaty version.

Ingredients (serves 3-4)

  • 500g pound lean ground beef
  • 1 Tablespoon sesame oil
  • 1/4 – cup brown sugar (you can also substitute this with sweetener, I’d use about 1/3 cup )
  • 1/4 cup soy sauce (use low-sodium as an alternative if preferred)
  • 3 cloves garlic, minced
  • 1/2 teaspoon fresh ginger
  • 1 teaspoon crushed chilli flakes (more if you like some spice)
  • 1 bunch green onions to garnish
  • Rice to serve
  1. Put 1 tablespoon of sesame oil in a wok and heat. Fry the beef until cooked through, I tend to use extra lean of 5% fat. If you don’t you’ll want to drain any excess fat off whilst cooking.
  2. Meanwhile cook rice, I use a rice cooker (it’s a life saver). If using a pot or cooker I’d suggest one cup of rice to one cup of water with white rice.
  3. Once the beef is cooked add all other ingredients bar the green onions. Allow this to cook on a low heat for 5-7 minutes to let the flavours absorb into the meat.
  4. Chop up the green onions and serve with the beef and rice – season with salt and pepper if needed, I find the soy sauce means little need for salt.

I noted this feeds 3-4, but when I made it Greg ate the additional two portions as well as his own….my quest to keep him full continues!
