Salt and chilli chicken

This is is a bit of a fake takeaway and probably a lot healthier than a Chinese, it’s super easy!

Serves 4

Ingredients

– 4 chicken breasts, finely sliced

– 1 x onion, finely chopped

– 2 x peppers

– 3 x tbsp soy sauce

– 40g Smash (dried potato)

– 2 x eggs

– 2 tsp chilli powder

– 1 tsp salt

– 2 cups of basmati rice to serve

1. Preheat the oven to 180C. Meanwhile, cut up the chicken. Get two bowls and an oven tray ready. Put the two eggs in one bowl and whisk. In the other put the salt, chilli powder and smash. Dip the chicken into the egg mixture and then the dry mixture and place on the oven tray. Cook for about 25 minutes, it should have a nice crispy coat.

2. Whilst the chicken is cooking, cook the rice according to package instructions.

3. Stir fry the onion and pepper in the soy sauce on a medium heat until soft.

4. You’re ready! Just plate it all together and enjoy!
