Lamb and Hummus ‘Pizza’

I saw this recipe a while back on TV and tried it out for myself, it’s almost an Arabic twist on pizza and it’s actually really quick to make during the week when time is limited.

Serves 4

Ingredients 

  • 4 large Lebanese flatbreads 
  • 520g hummus (I used store bought to save time but you can make your own)
  • 600g lamb mince 
  • 1 tbsp mint 
  • 2 heaped tbsp of honey 
  • 1 tbsp Ras el Hanout 
  • Sea salt and pepper 

Method 

  1. Preheat your oven to about 180c. Place the lamb into a mixing bowl with the mint, honey, Ras el hanout and S+P. Combine all the ingredients well and shape into round patties – you should get about 16 of these (4 per pizza).
  2. As lamb can be quite fatty I like to fry it off first and drain any excess fat to avoid the bread getting too soggy. 
  3. Place your flatbreads out and cover in hummus, completely up to you how much. Then place 4 of the lamb patties on the bread as well. Place in the oven and cook for 5-8 minutes if the lamb has been fried off. If the lamb is just sealed or not cooked beforehand you’ll need about 20 minutes, the downside of this I find is the bread can burn when at a high temperature for so long.
  4. Serve this alongside a salad and I’d recommends a drizzle of yoghurt on the pizzas
