Cloud Bread

I’ve heard a lot about ‘cloud bread’ recently, a supposed alternative to bread that’s carb free! It all looked too good to be true so after looking around I found a recipe to try out. I was really surprised with the taste and the texture, as the main ingredient was egg I thought this would just taste like eggs – how wrong I was! The texture of the bread is good, and I even used it as a bread substitute for my Sunday morning bacon roll.

This recipe makes about 6 slices of the bread.

Ingredients

  • 3 large eggs
  • 1 tbsp of honey
  • 3 tbsp of extra low fat cream cheese (full fat defeats the purpose I think)
  • 1 tsp baking powder
  • herbs of your choice – I used rosemary to top mine off

Method

  1. Heat the oven to about 150C fan.
  2. Separate your three eggs into two bowls. To the bowl with yolks add the honey and cream cheese and whisk to combine.
  3. In the other bowl whisk the egg whites with the baking powder until they are fluffy, not exactly soft peaks you’d get with meringues but not far off.
  4. Add the yolks to the eggs whites and fold the mixture together gently.
  5. Place some parchment paper on a baking sheet and divide the mixture into 6 circular pieces on here – it should thick enough to be placed on here without running and combining into one giant blob! I added some rosemary to the tops of my bread just to give some additional flavour, you could add anything you liked here.
  6. Bake for about 15 minutes until a golden brown – I checked on mine because my oven is so dodgy and they only took about 13 minutes, just make sure they don’t burn.
  7. Once cooked let them cool and enjoy – slightly defeated the purpose I tried a slice with Nutella, still better than bread…
