Mac & Cheese

One of my favourite comfort foods – perfect for the cold nights and you can add different ingredients easily to give a different flavour. I do a lot of this by eye, so I’ve tried as best as I can to give accurate measurements! If you’re making this and the sauce is too thick, add more milk. Similarly if it’s too thin add more cheese.

Serves 4

Ingredients

  • 2 tbsp butter
  • 3 tbsp flour
  • 500ml semi-skimmed milk
  • 250g cheddar
  • 50g parmesan
  • 350g macaroni

Method

  1. Boil water and cook the pasta according to instructions.
  2. Meanwhile, melt the butter over a medium heat and then add the flour, mix this until it forms a paste. Now add the milk and continue to stir until there are no lumps and then add in the cheddar cheese.
  3. Drain the pasta and add to the cheese mixture and stir. Pour this into an over proof dish and top with the parmesan. Then place this under the grill until crispy.
  4. Serve with lots of hot sauce (preferably cholula!)

Sometimes I like to fry some chorizo and add this to the mixture before grilling, you can also add broccoli which goes nicely.
