These are one of my favourites, quick and easy and probably not the most authentic recipe but they go down well!
Ingredients
- 500g lean (5% fat) beef mince
- 2 cloves of garlic minced
- 2 tsp of chilli powder (add more if you like a lot of spice)
- 2 tsp of oregano
- cheddar cheese (add as much as you like, and you can use any cheese you like)
- 1 lime
- 4 tortillas

Directions
- Fry the garlic and chilli in a pan for 2-3 minutes, then add the beef and oregano and brown the mince. Add the juice of half of a lime. I like the beef to be quite dry for these so the tortillas aren’t soggy.
- Place a tortilla on a hot pan and cover half of it with grated cheese, then add the beef and top with a little more cheese. Fold the tortilla over to cover the beef mixture.
- Repeat this process for all of the tortillas and keep finished ones warm in the oven.
- Serve with hot cause and sour cream.
This is recipes always goes down well, another option is to have chorizo and spring onion as the filling. I just fry chorizo with some lime juice and use that as a filling with cheese. Simple and tasty, perfect if your busy midweek but want to cook.
